MITS Kitchen - Hamburger/Sandwich Buns

This is a variation of my cinnamon roll recipe.  The basic recipe is so versatile!  With just a few changes I ended up with a roll we all really enjoyed.  The only downside for me is that I only used storebought flour insead of freshly ground.  But that's a topic for another day....

Hamburger/Sandwich Buns 

Mix in large bowl of stand mixer:

1 cup warm water
1/8 c honey
1 tbsp. dry yeast

Allow to stand 5-10 minutes.  After yeast is bubbly, add:

1/3 cup oil ( I like butter or coconut oil)
1 tsp. salt
3 - 3 1/4 cups bread flour (I used Gold Medal, but highly recommend King Arthur brand)

Knead in mixer about 5 minutes.  Place dough in greased bowl and allow to rise in a warm place until doubled (20-30 minutes).  After rising, remove dough from bowl and divide into 10 equal pieces for larger rolls, 12 for smaller.  Shape and place on a greased baking sheet.  Here's when I put them in to rise:
 
Allow to rise again for 15-20 minutes in warm oven turned off.  Don't allow to fully rise - I let them go a bit too long:

Once almost risen, turn on oven to 375 degrees and allow last bit of rising as the oven heats.  Bake for 20-25 minutes until golden brown.  Cool on baking rack; slice in half when cool.  Makes 10-12 rolls.
